Oven Baked “Hard Boiled” Eggs

If you’ve never heard of baking your hard boiled eggs, boy are you in for a treat! While it’s not necessarily a faster method, it is far less hands on, allowing you to complete other tasks instead of watching for your pot of water to boil.


What’s more, cooking hard boiled eggs in the oven allows me to make bigger batches at one time, and my eggs turn out perfectly cooked every time!

Easy Cinnamon Roll Waffles for Christmas Morning

I’ve been working on a little project with Great Value refrigerated doughs over on Unsophisticook, and the latest “recipe” I developed is for cinnamon roll waffles with cream cheese “syrup”. We made these on Sunday morning before my youngest daughter’s big gymnastics meet, and she seriously ate so many that I told her she wasn’t going to fit into her leotard anymore! So to say they were a hit is an understatement…


These cinnamon roll waffles are seriously so simple and easy to make — I’m not sure I’ll ever bake my cinnamon rolls again. We’ll be having them again on Christmas morning!

(BTW, she got bronze on bars and medaled on beam and in the all-around — not bad for the youngest girl on the team! Proud of my peanut.)

My Favorite Pumpkin Bread Recipe

I knew I’d hit on a winning pumpkin bread recipe this morning when I overheard my kids squabbling over who got the last piece… After getting this card from my daughter earlier this week, I was thrilled that there is something I cook that she will eat.


Remember the homemade pumpkin puree I made a few weeks ago? Well, I used 2 cups of it in this recipe, but you can substitute canned pumpkin if need be. However, if you have time to go the homemade route, I highly recommend it.

You might be surprised to learn that I use coconut milk in my pumpkin bread, but it gives it a lighter texture that I love! If you’d like to give this a try yourself, there’s a new $1 off Silk Milk printable coupon available right now.

Thanksgiving Side Idea: Roasted Sesame Asparagus

So I’m actually not cooking Thanksgiving dinner this year… We’re going to NYC to see the Macy’s Thanksgiving Day Parade, squee!!! But if I was cooking, I’d definitely be making this simple roasted sesame asparagus as one of our side dishes.


I know asparagus can be a tad expensive this time of year, but this is such a simple and flavorful side that I feel like the small splurge is totally worth it!
