If you’re looking for a simple and delicious Easter brunch idea, try these mini spinach quiche! They’re easy to make, and they’re tasty hot or cold, making them a fantastic on-the-go breakfast option as well.


Filled with a spinach and bacon combination, my kids loved these mini quiche so much that I was barely able to snap a picture before they devoured them all!

Oven Baked Mashed Potatoes {Simple Easter Side}

If you’re looking for a great Easter (or anytime) side dish, give these make ahead mashed potatoes a try! Along with my creamed corn casserole, it’s one of the most requested side dishes at family gatherings.


My favorite feature of these oven baked mashed potatoes (besides the delicious taste) is that you throw the ingredients together the night before and then refrigerate the potatoes until you’re ready to bake them for your meal. Plus the recipe doubles easily for large family gatherings, potlucks, cookouts and more!

Donate to Ohio Food Banks + Pasta alla Bolognese Recipe

While I wouldn’t exactly file this delicious pasta alla bolognese under quick and easy meals, it’s definitely quicker than the traditional version which requires several hours of simmering. Have it on your dinner table in under 45 minutes!


I also switched it up a little from the usual ground beef, using ground pork for additional flavor. Did you know that you can use ground pork in place of ground beef in any recipe?

Right now when you click through to my post and watch the cute “Pork from Fork to Farm” video, the Ohio Pork Producers Council will donate 1-lb. of ground pork to Ohio food banks for every view! What are you waiting for?!?
