Easy Weeknight Meal: Walking Tacos

October 30, 2012 by Tara Kuczykowski 2 Comments

Turn tacos into a fun and tasty on-the-go dinner by turning them into walking tacos! Perfect for busy weeknights or game day get togethers, the ease of preparation and cleanup make these a perfect choice.

I use my homemade taco seasoning in my walking taco recipe, but it’s also a great way to use up all of that Ortega seasoning that we often see for FREE!

Bake Some Oatmeal Pecan Banana Bread for National Oatmeal Day #YayOats

October 29, 2012 by Tara Kuczykowski 2 Comments

Did you know it’s National Oatmeal Day? I know, I know, there’s a day for everything, but I do love my oatmeal…

I was craving banana bread the other day, and thought, “Why not toss in some oats?” And so this oatmeal pecan banana bread recipe was born — and I highly recommend it. My kids absolutely inhaled it!

Could I ask just a small favor of you all? If you have a minute, please vote for my recipe — I have a chance to be featured in the Quaker® Oats newsletter!

Plus, when you vote you will be entered to win a $1,000 gift card! I’d love to see one of my readers win this nice little holiday bonus. Yay Oats!!!

In my book there’s nothing like a good fresh tomato salsa with its bright flavors and a touch of heat! It’s so simple to make yet has a big impact on a meal.

Just be sure to wear rubber gloves when dicing those jalapeños! I learned that one the hard way…

Make Your Own Homemade Mayonnaise

October 23, 2012 by Tara Kuczykowski Leave a Comment

Are there certain recipes that you’ve held off on trying because you didn’t think your kitchen skills were up to par? Homemade mayo is one of those recipes that intimidated me — until I tried it for myself and saw just how easy it really is!

My husband is the mayo fan in our household, and he gave this easy homemade mayo recipe his stamp of approval. I do use mayonnaise on occasion though, and I definitely prefer this silky, smooth homemade mayo to the gloppy store bought version.

Easy Homemade Pancakes

October 16, 2012 by Tara Kuczykowski 1 Comment

Growing up, we typically made pancakes from a boxed mix, but as many of you know, we don’t often use boxed mixes anymore. Instead I use my homemade Bisquick mix.

Many of you have asked how to make pancakes using this substitute, and I’ve shared one of our family’s favorite recipes for doing so. They’re just as easy as using a box when you keep the mix on hand!

Hey there — nice to meet you!

I'm Tara: mom of 5 teens/tweens and one 80-lb. Weimaraner, who fancies herself a lap dog. Born and raised in Ohio (GO BUCKS!!!), my fave things include cooking + baking, my JEEP Rubicon, the 4x4 beaches at OBX, and checking out the local craft beer scene...

As you can imagine, all of this puts a good dent in my monthly budget. So I've learned how to save on the things I NEED, so I can spend on the things I WANT.
