Over the past few weeks, I’ve shared pictures and stories from our family’s recent brunch outings to Einstein Bros. Bagels. Going out to breakfast or brunch isn’t something we do very often since my boys are in school and we have sports activities on the weekends, so we all enjoyed these special treats.
With all of the recent coupons they’ve been releasing, grabbing brunch doesn’t have to be expensive either! This week, “like” Einstein Bros. on Facebook and download a BOGO coupon on bagel thin sandwiches.

In Hawaii it was every Sunday at grammas house. Cars would park up and down the street. In Hawaii you take your shoes off before you enter the house. Shoes and slippahs everywhere! Gramma had 6 kids and they all have kids now! Gramma has passed since but childhood memories are the BEST!

Biscuits and gravy, eggs, grits, sausage, bacon, toast and preserves. When my family goes on vacation, we go through 2 dozen eggs per day and over 40 biscuits. I don’t know how I’m not 500 pounds…

No breakfast traditions at our house, but breakfast for dinner was always a fun and exciting thing growing up. Every once in a while I will make a special breakfast treat of butterscotch pull aparts… YUMM!!!

One of my favorite breakfast stories comes from when I went to the adult program at Space Camp a couple of years ago. The morning of the big simulated mission, the culmination of the week, the cafeteria always serves a big, traditional, steak and eggs astronaut breakfast. It’s served on real china, with real silverware. Being from Texas, I like salsa on my eggs. I hadn’t asked for it prior to this morning, but figured, if a random, special request was going to be indulged, this would be the morning to ask for it. So I did.
It took about 5 minutes and a couple of “translators” for me to get the very southern cafeteria staff to understand my request. (I don’t know if my midwest, almost Canadian accent hindered things any). I got some weird looks from many of my team members…except the guy from Houston who also appreciated salsa for his eggs but was too polite to ask for it.

Once in a while on weekends we will make bacon, eggs and pancakes for breakfast. And an even better treat is when we make them for dinner!

Every Sunday morning, my DH gets up with the kids and they all make pancakes. Our 4 kids help daddy mix the batter, and add “treats” into the pancakes, such as sprinkles or chocolate chips. Sunday just wouldn’t be the same without Daddy’s Pancakes!
