Easy Homemade Uncrustables Sandwiches

June 29, 2012 by Tara Kuczykowski 3 Comments

I recently saw Uncrustables priced at $3.19 for a box of four… I love the convenience aspect, but OUCH! That’s not even enough for one lunch in our house.

Luckily, I figured out how to make homemade uncrustables, so our freezer is now stocked and my wallet is thankful! And I feel good because I can control the quality of the ingredients used.

Summer Cookout Recipe Ideas

May 25, 2012 by Tara Kuczykowski Leave a Comment

We never turn down an opportunity to host a cookout — birthdays, holidays, or just because it’s a beautiful day! With Memorial Day coming up this Monday, I thought I’d share a few of my favorite warm weather recipes, like this Grilled Corn on the Cob. With a dab of horseradish and a touch of paprika, it has just a bit of a kick to set it apart from the same old grilled corn!

And just a few more of my tried and true favorites:

As a side or as a dip with tortilla chips, this flavorful guacamole salad typically doesn’t last long. If you’re lucky enough to have some leftover (though I doubt you will), it’s even better the next day for lunch in a lettuce wrap!

This crunchy Greek cucumber salad is light and refreshing. Since there isn’t any mayo or sour cream in it, you don’t have to worry about it spoiling in hot weather!

Whether you consider this cream cheese pecan grape salad a salad or a dessert, chances are your bowl will be empty when the party’s over. It’s a real crowd pleaser!

Dessert doesn’t get any simpler than this easy shortcake recipe that’s made with my homemade Bisquick mix. Top with fresh, seasonal berries and a dollop of homemade whipped cream!

I’m not kidding when I say these are the BEST EVER strawberry daiquiris — friends are always asking for my “secret” recipe. For adults only!

Mother’s Day Brunch Recipe Ideas

May 11, 2012 by Tara Kuczykowski Leave a Comment

Looking for a few special recipes for your Mother’s Day brunch? I thought I’d share a few of my faves, like these Sweet Cinnamon-Sugar Crusted Popovers. While they look like they might be hard to make, they only take 5 minutes of prep and another 30 minutes to bake!

Paired with a pot of French press coffee, they’d be a delicious breakfast in and of themselves, but if you’re looking for more check out these other recipes that are sure to impress:

I made these lemon poppy seed scones for our Easter brunch. They’re flaky and tender, with just the right amount of lemon flavoring, and the lemon glaze was deliciously tart and sweet all at the same time.

This maple pecan-crusted bacon is sure to have them asking for more, more, more! And no one has to know just how easy it is to make…

If you’ve never tried this cream cheese pecan grape salad, you are in for a real treat. It’s easy to make, travels well, and it’s slightly unusual but absolutely divine!

I’ve shared this recipe before, but this heart healthy apple oat bran muffin recipe is still a family favorite. All five kids love them and eat them faster than I can make them!

What’s your favorite go-to brunch recipe? I’m always looking for new ideas to try!

Hey there — nice to meet you!

I'm Tara: mom of 5 teens/tweens and one 80-lb. Weimaraner, who fancies herself a lap dog. Born and raised in Ohio (GO BUCKS!!!), my fave things include cooking + baking, my JEEP Rubicon, the 4x4 beaches at OBX, and checking out the local craft beer scene...

As you can imagine, all of this puts a good dent in my monthly budget. So I've learned how to save on the things I NEED, so I can spend on the things I WANT.
