Creamy Red Potato Salad Recipe

July 19, 2013 by Tara Kuczykowski Leave a Comment

Summer cookouts and potato salad were made for each other, don’t you think? And right now my favorite is this simple and creamy red potato salad.

Boiling the potatoes, as with any potato salad recipe, is the most time consuming step, so I like to do this the evening before I’m planning to make it. The dressing can be made in under 5 minutes, making this a perfect party side!

Memorial Day Cookout Recipe Ideas

May 24, 2013 by Tara Kuczykowski 3 Comments

We’ve decided to change things up a bit this year, and instead of cooking out for Memorial Day, I’ll be serving these Slow Cooker Beef Barbacoa tacos. The slow cooker makes this barbacoa recipe so easy to make, and the house smells simply wonderful while it’s cooking!

I plan to pair it with some cilantro lime rice, homemade fresh tomato salsa, and I’m on the hunt for a really good Chi-Chi’s corn cake clone recipe. Anyone have one to share?!?

If you’re into more traditional cookout fare, here are some of our family favorites:

A simple coffee marinade adds a mouth-watering, smokey flavor to to these coffee-marinated rib eye steaks that you will never be able to pinpoint as coffee!

This corn casserole recipe is so good you’ll want to scrape the dish completely clean to get every last bit of caramelized goodness from the corners!

These grilled caprese tomato kabobs are a delicious, yet healthy, side that pair perfectly with grilled chicken or steak!

Don’t let a little rain slow you down. These easy slow cooker ribs are every bit as good as ribs cooked on the grill all day long!

Dessert doesn’t get any simpler than these patriotic trifles in jars. Make them up ahead of time and screw lids on them for a dessert to go!

Wash it all down with these easy strawberry daiquiris. I’m not kidding when I say these are the BEST EVER!

Labor Day Cookout Recipe Ideas

Looking for a few new ideas for your Labor Day cookout? Give this Jamaican Jerk Grilled Shrimp a try. It’s a touch spicy, but not TOO spicy, and you can use the extra spice mixture on chicken, pork and more!

And just a few more of my newest favorites:

Summer Cookout Recipe Ideas

May 25, 2012 by Tara Kuczykowski Leave a Comment

We never turn down an opportunity to host a cookout — birthdays, holidays, or just because it’s a beautiful day! With Memorial Day coming up this Monday, I thought I’d share a few of my favorite warm weather recipes, like this Grilled Corn on the Cob. With a dab of horseradish and a touch of paprika, it has just a bit of a kick to set it apart from the same old grilled corn!

And just a few more of my tried and true favorites:

As a side or as a dip with tortilla chips, this flavorful guacamole salad typically doesn’t last long. If you’re lucky enough to have some leftover (though I doubt you will), it’s even better the next day for lunch in a lettuce wrap!

This crunchy Greek cucumber salad is light and refreshing. Since there isn’t any mayo or sour cream in it, you don’t have to worry about it spoiling in hot weather!

Whether you consider this cream cheese pecan grape salad a salad or a dessert, chances are your bowl will be empty when the party’s over. It’s a real crowd pleaser!

Dessert doesn’t get any simpler than this easy shortcake recipe that’s made with my homemade Bisquick mix. Top with fresh, seasonal berries and a dollop of homemade whipped cream!

I’m not kidding when I say these are the BEST EVER strawberry daiquiris — friends are always asking for my “secret” recipe. For adults only!
