Join me every week for Win-It Wednesday. I’ll be posting several 24-hour giveaways throughout the day to give you plenty of chances to win!
Today is also the last day to enter to win $250 from Lottay.com!
Many of you have probably already heard of $5 Dinners, the blog written by my good bloggy friend, Erin Chase, that shares healthy, delicious, and affordable meals. And by “affordable,” I mean ultra-frugal — every recipe can feed a family for $5 or less!
If you’re already a fan of Erin’s or are now intrigued and interested to find out how you can prepare meals in your own home for $5 and under, you’ll be thrilled to find out that she recently published her own cookbook, The $5 Dinner Mom Cookbook.
This cookbook is jam-packed with not only recipes that can be prepared for $5 or less but also step-by-step instructions and tips on how you can pare down your grocery bill and feed your family for less. This is a must-read for those of you trying to stretch your budgets right now or anyone just trying to save in some areas so you can spend in others!
And Erin’s hooked me up with a special treat for my readers:

One of my faves is chicken & dumplings- it is cheap to make- but not as light. I try to keep things lighter by using the lower fat versions when available.

My kids love a “white meat” with rice casserole – very inexpensive. I’ve used chicken, turkey, and even pork chops with cream of mushroom soup and rice and it is a family hit.

My friends call it White Trash Chicken…..because it’s cheap and easy.
We used to make it often while in seminary (we were poor)!
1 box Stove top stuffing
1-2 cans cream of mushroom soup
4 chicken breasts cooked and chopped
Cook Stove top as directed. Add in soup and cooked chicken. Bake 350 for 30 min covered. Serve with cranberry sauce and veggies!
Easy and yummy!

Pasta is typically an inexpensive meal any time. I also like to cook up a link of kielbasa and about 4-5 russett potatoes in a skillet. This will last my family 2 full meals!
