January 6, 2010 by Tara Kuczykowski

Join me every week for Win-It Wednesday. I’ll be posting several 24-hour giveaways throughout the day to give you plenty of chances to win!

Today is also the last day to enter to win $250 from Lottay.com!

Many of you have probably already heard of $5 Dinners, the blog written by my good bloggy friend, Erin Chase, that shares healthy, delicious, and affordable meals. And by “affordable,” I mean ultra-frugal — every recipe can feed a family for $5 or less!

If you’re already a fan of Erin’s or are now intrigued and interested to find out how you can prepare meals in your own home for $5 and under, you’ll be thrilled to find out that she recently published her own cookbook, The $5 Dinner Mom Cookbook.

This cookbook is jam-packed with not only recipes that can be prepared for $5 or less but also step-by-step instructions and tips on how you can pare down your grocery bill and feed your family for less. This is a must-read for those of you trying to stretch your budgets right now or anyone just trying to save in some areas so you can spend in others!

And Erin’s hooked me up with a special treat for my readers:

My favorite inexpensive meal is cooking either pinto beans or seven bean soup from scratch. Add a batch of Jiffy corn muffins and you have a complete meal.

Easiest & cheapest meal I can think of is Mac n Cheese with Tuna & Peas! Ways to save ~ I buy meat in bulk whenever possible, separate & freeze in quart size baggies. I mostly use my coupons when things go on sale for the extra savings!

I don’t like to waste anything. When I make a ham I always save the bone with meat on it. I use it to make soup with cabbage, potatoes & green beans.

Our fave is garlic bread pizza. Use a long loaf of frozen garlic bread split in half (we like Meijer brand) then spread with pizza sauce and mozzarella cheese and top with whatever veggies I happen to have on hand. It makes 2 long pizzas, more than enough to feed our family of 4. Cheap and tasty!

My favorie inexpenisive meals are the ones I make up from leftovers. Like repurposing chili by putting in blender until smooth and pouring over tortillas stuffed with cheese…Chilis Cheese Enchiladas. I save money by only buying veggies when they are on sale. Then, I roast or saute them and freeze them for soups, quesadillas, or casseroles.

My favorite inexpensive dinner is actually having breakfast for dinner (we have chickens so eggs are practically free) and I make pancakes YUM!

One of our favorite meals is lettuce , tomato and other veggie salad topped with left-over chicken (or other left-over protein). To make our produce dollar go further, we shop at our local farmer’s market weekly!

My favorite inexpensive meal right now (I kind of go in streaks) is Breakfast Burritos. Got hooked on them at the farmer’s market the past few summers, and missed them so much we had to make our own. Basically we scramble eggs, and make sausage and hashbrowns, and put them in tortillas with cheese and salsa. Yummy!
