Creamy Chicken and Rotini Primavera
Ingredients
1/2 pound dry rotini
2 Tablespoons vegetable oil
1 pound boneless skinless chicken breast – cubed
1 pound frozen vegetable mix – thawed
4 ounces Neufchatel cheese (reduced fat cream cheese)
1/2 cup lite Italian dressing
1/2 cup 2% fat milk
Directions
Cook rotini per package directions to desired doneness. Drain well and keep warm.
Heat oil in a heavy skillet over medium-high heat. Add chicken cubes and cook until no longer pink.
Combine cream cheese, dressing and milk and whisk until smooth.
Add thawed frozen vegetables to chicken along with sauce mixture. Stir well and heat through – about 5 minutes.

I came up with this cheap recipe for Swiss Steak with tomato gravy when my kids were young. Everything was less expensive then, but it’s still great comfort food for very little $$$. Buy whatever beef is on sale or marked down (about 1 1/2 pounds)…… swiss steak, round steak, chuck, sirloin, etc. Cut it into serving sized pieces. For the gravy use 1 can of tomato soup, 1 soup can of water, 1 package of brown gravy mix and 1 package of onion soup mix. Mix well, pour over beef and cover with a lid or foil. Bake at 350 for about 2 hours or until meat is tender. Serve with mashed potatoes, rice or noodles. Use generics, of course. Back in the day, I used to be able to feed 5 of us for about $3 with thie dinner.

One Of my favorites is Vegetable stirfry served on brown rice.
you can use all kinds of veg for stir fry .Add leftover chicken or shrimp to make it interesting .Add soysauce and spicy sriracha sauce. serve with brown rice .

It’s not the healthiest thing but it is the easiest for me…spam (or some canned luncheon meat) with white jasmine rice…or an egg and rice.
It got me through my childhood and it’s good enough for my husband and I =)

Well, I have a gazillion ways that I save money in the kitchen! But here’s just one…..I clip coupons and watch the sales. I plan my meals by what I have in my pantry and what’s on sale. I do once a month cooking, so my freezer is stocked with TONS of healthy, homemade meals.
I would love to win this book. I’ve been following Erin’s blog for a real long time. :)

I boil a package of penne pasta. While that’s cooking, I add about 2 tbsp. each of olive oil and butter to a pan, saute 1-2 cloves of garlic, then add a can of diced tomatoes. Pour this onto drained pasta and add some parmesan cheese.
This is made often when the 3 older kids all have sports in different places on the same night!
