My cheap meal is to buy butterball turkey kielbasa when it is buy one get one free, a head of cabbage and new potatoes. Put 2 cups of water in soup size pot, turn on high, cut potatoes in half, put cut side down in water, bring water to boil, cut cabbage in quarters, layer on top of potatoes, cut kielbasa into eight pieces, and layer on top of cabbage. Once you get a good boil, cover and boil 15 min. serves 4. for sauce, mix some dijon or spicy mustard with some melted butter. start with 2 TBS of butter and add mustard till it is the consistency that you like. I got this from Desperation Dinners and it has been a staple every since. Fast and cheap

My favorite cheap meal is chili, made in the crock pot. I don’t have an exact recipe… just use whatever beans, tomato “stuff” (juice, canned, etc) is on sale, etc. with some ground meat (chicken, turkey or beef).

My favorite, in-expensive meal to make is Spaghetti. It is my favorite meal, costs only about $10 to make (unless I have coupons!) and I can freeze 1/2 the sauce for a 2nd dinner or 2! Would LOVE to win one of these cookbooks!
Janet
I save money by reducing the amount of red meat in recipes or substituting for beans.

My super easy, cheap and fast meal (perfect for those of us who really don’t know how to cook but keep trying nonetheless) is: tortilla, eggs and ham mix!
add a little bit of olive oil in a frying pan, add the tortillas, when they’re a little bit brown, add the ham , mix for a couple of mins, then add the eggs and voila!!… great meal.

Anything with rice or beans in it will stretch the budget. Then just add chicken or ham or beef and whatever else you have around. Luckily my kids aren’t very picky!

my favorite meal is just chicken or turkey salad (diced turkey with mayo and relish) wrapped in a tortilla. We dont have kids, so this does it for us (we might squeeze in a veggie hehe!

My favorite affordable meal is hamburger gravy. I like open faced sandwiches :) If I want to be a little more “healthful” I use ground turkey and whole wheat flour and bread when I have it available. I also like grilled chicken with tomatoes and artichokes and rice.

Our favorite inexpensive meal is chili.

I love cooking up a pound of hamburger and covering it with mushroom soup and serving it over quick rice. Flavor with a little soy sauce and you are good to go.

Chili or beef and bean enchiladas. Really anything with beans – they are filling and full of fiber.
