Many of you have probably already heard of $5 Dinners, the blog written by my good bloggy friend, Erin Chase, that shares healthy, delicious, and affordable meals. And by “affordable,” I mean ultra-frugal — every recipe can feed a family for $5 or less!
If you’re already a fan of Erin’s or are now intrigued and interested to find out how you can prepare meals in your own home for $5 and under, you’ll be thrilled to find out that she recently published her own cookbook, The $5 Dinner Mom Cookbook.

This is a must-read for those of you trying to stretch your budgets right now or anyone just trying to save in some areas so you can spend in others!
And Erin’s hooked me up with a special treat for my readers:

One box of Macaroni and Cheese- 1lb of hamburger and 1 jar of Ragu or any other brand you prefer. Cook the hamburger in 1 pan the pasta in another, mix pasta with hamburger, then dump in sauce.
It is so easy and yummy!!!!

Our favorite inexpensive dinner is pasta! I make my own sauce, and stock up for the year so I save money there, and only buy pasta when it is on sale and I have a coupon. Sometimes also, I add cooked veggies to the pasta or leftover chicken, meat, etc., still very cheap and healthy!

I like making rice and beans.
Usually it’s brown rice, black beans, medium salsa or picante sauce and topped with cheddar cheese. Fairly nutrious, easy to make, filling and great for cold winter evenings.
Beans and rice are cheap. For this recipe, cheap salsa will work. And I stock up on cheese when it’s on sale and then freeze it. Since it will be grated and melted, the change in consistency that sometimes comes with freezing cheese isn’t an issue.

Our of our favorites inexpensive meals is pasta. I like to make penne with a meat sauce, topped with mozarella cheese and thrown into the oven to let the cheese melt.

Arroz con Pollo and frijoles negros. This is Costa Rica chicken rice and black beans. I learned to fix this meal when my family and I were missionaries in Costa Rica. It is affordable and is always a big hit when we have guests over. Thanks for the giveaway.

One of my favorite inexpensive meals is homemade ravioli – it takes a little bit of effort, but once you’ve made them a few times, it is super easy! And you can stuff them with whatever you have leftover in the fridge – just combine it all, add an egg & a little ricotta cheese to the mix, and voila! Love them.
