January 6, 2010 by Tara Kuczykowski

Join me every week for Win-It Wednesday. I’ll be posting several 24-hour giveaways throughout the day to give you plenty of chances to win!

Today is also the last day to enter to win $250 from Lottay.com!

Many of you have probably already heard of $5 Dinners, the blog written by my good bloggy friend, Erin Chase, that shares healthy, delicious, and affordable meals. And by “affordable,” I mean ultra-frugal — every recipe can feed a family for $5 or less!

If you’re already a fan of Erin’s or are now intrigued and interested to find out how you can prepare meals in your own home for $5 and under, you’ll be thrilled to find out that she recently published her own cookbook, The $5 Dinner Mom Cookbook.

This cookbook is jam-packed with not only recipes that can be prepared for $5 or less but also step-by-step instructions and tips on how you can pare down your grocery bill and feed your family for less. This is a must-read for those of you trying to stretch your budgets right now or anyone just trying to save in some areas so you can spend in others!

And Erin’s hooked me up with a special treat for my readers:

Our favorite inexpensive recipe is enchiladas – all the meat, veggies and starches in one flavorful roll – inexpensive cuts of chicken or beef make it reasonably priced. Throw in frozen corn and canned beans to stretch the meal and add fiber!

Great Northern Beans and Jiffy corn bread. (add small box of instant pudding mix and a little extra water to 2 boxes of Jiffy mix) The kids actually do a little war dance around the kitchen when they hear we are having Old Beans for dinner. 8^)

I like to cook a whole chicken in our crockpot. We eat it for supper and then I chop up the rest and we use it in casseroles, etc. for the next few days. Or I freeze it for later use. And a whole chicken is pretty cost effective. I usually cook it with potatoes and carrots. Yum!
