My favorite budget friendly meal is anything with pasta. I make it healthy by adding canned or fresh tomatoes and using whole grain pasta (which I stock up on when I find it on sale!)

I like to cook a whole chicken in our crockpot. We eat it for supper and then I chop up the rest and we use it in casseroles, etc. for the next few days. Or I freeze it for later use. And a whole chicken is pretty cost effective. I usually cook it with potatoes and carrots. Yum!
