Pizza! We love making our own. I buy the crusts when they are on sale and freeze them so all I have to get is sauce, cheese, and pepperoni. It’s a quick meal that the kids love.

My favorite way to save money while providing healthy meals is to make things, like a full chicken, that I can use for two meals. I plan chicken one night, and then fajitas the next for instance.

One of our favorite inexpensive meals is a good rice jambalaya made with whatever leftover protein(s), vegetables, tomatoes, and of course, rice (leftover or fresh). It is a great way to use up all the leftovers in the refrigerator. I have even used seafood! Yummy!

I’m a subscriber. I like to have breakfast for supper. Eggs, pancakes, waffles, toast and fry up some deli ham or left over bone in ham or bacon or sausage.

One of our favorite inexpensive meals is a chicken alfredo pasta dish… it sounds and tastes more expensive than it is…I take this to pot lucks too and its always a HUGE hit. I can easily make enough for 30 people for way under $20!

If I am in a hurry or just want to make an inexpensive meal, I make baked spaghetti using whole grain noodles, jarred sauce ( that is usually free or very cheap!) and then top it off with cheese ( I buy blocks on sale, stock up and shred my own!) and bake at 350 degrees until the cheese is melted.
Sometimes I brown ground beef and mix in and/or add bell peppers or mushrooms if I have them on hand, but it’s not necessary. The cheese adds some extra expense, but really adds flavor when you are using premade sauce.

Our inexpensive meal is a “Russian-style” soup I make (not exactly traditional in the sense of borsch, but commonly found in households). It’s insanely cheap to make and the ingredients in our house are almost *always* on hand. I sautee cut-up hot dogs, grated carrots, onions and other things I have in the house, which are commonly red peppers and/or mushrooms. I add a little ketchup and salt and pepper. I then put some water in a pot: add cut-up potatoes and the sautee mixture and either chicken stock or I usually use bouillon cubes to taste. I typically add fresh chopped dill at the end. You really can get away making this soup with as little as two or three hot dogs and a few potatoes, a carrot and a two cubes of bouillon, which is really, really cheap. I know the hot dogs and the ketchup may throw people off, but *really* it’s not as bad as it sounds and for some reason you cannot taste the ketchup in the end and you wouldn’t even know it was in there, but it adds something to the soup that’s hard to explain!
