Many of you have probably already heard of $5 Dinners, the blog written by my good bloggy friend, Erin Chase, that shares healthy, delicious, and affordable meals. And by “affordable,” I mean ultra-frugal — every recipe can feed a family for $5 or less!
If you’re already a fan of Erin’s or are now intrigued and interested to find out how you can prepare meals in your own home for $5 and under, you’ll be thrilled to find out that she recently published her own cookbook, The $5 Dinner Mom Cookbook.

This is a must-read for those of you trying to stretch your budgets right now or anyone just trying to save in some areas so you can spend in others!
And Erin’s hooked me up with a special treat for my readers:

Our favorite inexpensive meal is chicken fried rice. It is also a great way to sneak in some veggies! To make it less expensive, we use veggies that we grew in our garden and we just pull them from the freezer when we need them.

When we have leftover chicken, we make soft tacos.
We all like peppers(red, green, or yellow) on them too!

Chicken One dish…..Boneless/skinless chicken breasts 80z Sour Cream, can of Cream of chicken. Mix soup and Sour cream and cover the bottom of a 9×13 lay chicken on top and cover with foil bake @ 350 for 1 hour or until no longer pink. Serve over rice. I usually use more soup and sour cream because we love the sauce .
