Many of you have probably already heard of $5 Dinners, the blog written by my good bloggy friend, Erin Chase, that shares healthy, delicious, and affordable meals. And by “affordable,” I mean ultra-frugal — every recipe can feed a family for $5 or less!
If you’re already a fan of Erin’s or are now intrigued and interested to find out how you can prepare meals in your own home for $5 and under, you’ll be thrilled to find out that she recently published her own cookbook, The $5 Dinner Mom Cookbook.

This is a must-read for those of you trying to stretch your budgets right now or anyone just trying to save in some areas so you can spend in others!
And Erin’s hooked me up with a special treat for my readers:

I’m a fan of anything with pasta. Throw some veggies and tomato sauce in there and we’re good to go.

We love this cheap recipe:
1 lb ground beef, cooked
1 lb elbow noodles, cooked
2 cans tomato soup
1/2 tsp onion powder (can use real onion cooked, my children don’t like real onions :) )
Mix together in pan, warm for about 15 minutes. Serve with cheap garlic bread: on a cookie sheet spread sliced white or wheat bread, spread with butter, sprinkle with garlic salt or powder. Place under broiler until crispy, flip!
We love this and it’s super cheap!

We are a salsa chicken family… toss chicken breasts in the crock pot with some salsa, a can of black beans, a cup or two of corn and let it cook all day. Leftovers make great freezer burritos for quick and easy lunches. Thanks for a fabulous giveaway!

Our favorite cheap dinner has to be hot dogs. Not very imaginative. We have fries with them, sometimes. Everyone in my family likes different foods, so it’s hard trying to find something everyone can agree on.
Carmen
Our favorite simple and inexpensive meals are breakfast – eggs and bacon, pancakes or waffles, omelets, skillet scrambles with “everything” in the fridge, etc.

Buy a whole chicken- you can get at least 4 meals out of it-
1- roasted chicken
2- leftover chicken pieces in another dish- like chicken salad or for use in another hot dish.
3 &4- make a soup with the carcass – this will can feed your family for 2 days.
Vegetables are good filler-uppers. And they cost Way less than chips!

I toss whatever from the manager’s special meat bin (for some reason pork country-style ribs show up a lot… although I’ve done pork chops and chicken, too) in the crock pot with half a bottle of marinade and enough water to just cover everything. Leave it on low from morning until dinnertime. Pull out the meat (careful – it should fall apart!), and the pour the juice into a pan. Add some flour slurry and bring to a boil for some gravy… serve over mashed potatoes, with some salad on the side… we do this twice a week or more! YUM!

One of my favorite inexpensive meals is to take Zatarans Jambalaya mix, add a can of Rotel Tomatoes & green peppers in addition to the water the package directs.. then add sliced link sausage (sometimes I use little smokies), and right before its done (read the directions on the box) add shrimp and serve.. YUM! Ya just dont need anything else cept maybe a glass of water! ;)

I make a lot of meals and freeze them. I also have participated in a food swap with other families. Everyone makes one dish and we all end up with 6-8 (depends on number participating) great meals.
