Since my fiance and I are both working and going to school, we often don’t have time to cook “real” meals, especially to eat together. We generally end up eating on our own, so my favorite meals to make are those that can be reheated later on and used for leftovers. Any meal that I can get on a good sale (especially with a coupon) is considered a budget meal in our house. We accommodate our meals to whatever’s on sale. If chicken’s on sale, we buy a bunch of chicken & go home & find recipes online for things we can make with items we already have in the pantry. It’s a crazy system, but it works for us.

I love Crockpot meals! And now, when it’s literally below freezing outside, there’s nothing like warm potato soup. Although not the healthiest (especially after I add cheese and bacon), it hits the spot!

I sencond enchiladas! (or thirds”) i usually have some chickena nd left over toritllas.. put some bbq with the meat, cheese, and grill it, my hubby will add salsa and cheese and lettuce and we are on our way to a cheap easy and quick dinner.

Using coupons for free food really stretches.
I take one of my free pkgs. of hot dogs and make a casserole of it.
Slice the hot dogs, mix in celery soup, mayonnaise, onions, diced tomatoes, basil and thyme, diced celery. Top with buttered bread crumbs and bake.
Very yummy.
