Spanish food usually = inexpensive. 2 cups of rice, 1 can of beans, and chicken with several seasonings makes for a filling and inexpensive meal. (First saute chicken with salsa, onions, peppers and mix in adobo, cumin, a packet of sazon and some tomato sauce or paste, then add rice and beans and cook with rice)
Arroz con pollo never gets old in my house!

My favorite trick for inexpensive meals is to cook based on sales/ deals… free ground beef from the local butcher makes great/ healthy/ inexpensive tacos of meatloaf… love both! :)

Chicken breasts, jar of salsa and tortillas. Slow cook the chicken with the salsa. Once done shred chicken (I usually add more salsa) and you have chicken tacos!! They are so moist and yummy!! Not only is it inexpensive but is fast.

Egg bake! I just made one with a dozen eggs (Walmart when they were 88 cents), a cup of cheddar cheese, a cup of milk and a package of crumbled Jimmy Dean Sausage ($1 after coupon). Spray a glass pan, crumble the sausage, shred one cup of cheese on top of that and top with the eggs (beaten) and milk mixture. Bake at 350 degrees for one hour.

My favorite budget meals are always Winter ones… beans and cornbread, grilled cheese and tomato soup, etc. You can make a huge pot of something and have it last for several days!
