A favorite cheap meal of mine is chicken pot pie. It is simply 2 pie crusts, thawed. In a bowl, mix up about 1 cup of leftover chicken (or turkey), some leftover veggies, or a can of Veg-All, a can of your favorite cream soup, and whatever seasonings you like, garlic, S&P, etc., mix well, and pour into one of the pie crusts, then top with the other pie crust. You can get fancy and cut shapes out of the other pie crust with cookie cutters, i.e., hearts for Valentine’s Day for example, and place those over the top of the mixture. Bake at 350 for about an hour. Yummy! Also freezes well. Love your site!

There are lots of cheap-o meals we make, mostly with hamburger because we get a 1/4 of beef from my family. One of our favorites is to make BBQ and serve it over either mashed potatoes or baked potatoes. Yum!
