My fave. inexpensive, quick meal (which also makes a tonne, we have a family of 7) is “POTATO CORN CHOWDER”
You peel as many potatoes as you want (so for my huge family, I’ll peel about 14-15 decent sized potatoes, which we get from farmers when they harvest them, you can call some farmers, and they’ll let you walk down the fields that they’ve already done, and pick up any and as many that have fallen from the truck or they missed, and we always end up with 5-6 huge plastic bins!)
In a pot, add 1/2 cup butter & spring onions, wait till they soften, add about 2 TBSP flour (for thickness) then add 3C of chicken broth and water (again, depending on the size of the meal you want, if it’s for a family of 4, then add only 1 and a half Cups)
Bring to boil, add your potatoes, turn the stove down to between low and medium, and after about 1 hour, add a packet of frozen corn. Stir occasionally, when the potatoes are soft – it’s ready! Easy, & cheap!
