It is amazing what you can do with a pound of ground chuck or ground beef such as spaggetti meat sauce, a small meatloaf made with saltines or oatmeal to stretch the meat, bean burritos with a small amount of beef in each, several casserole or skillet dinners call for only 1 pound of beef, browned ground beef with a gravy of cream of mushroom served over rice is a great budget stretcher also.

My favorite inexpensive meal is homemade chicken noodle soup and orange rolls! The best thing about this meal is that the night before we have roasted chicken (that we buy or roast ourselves) and have that for dinner and then I use the leftovers for the soup. Then the soup makes enough that we can have it for dinner the next night! So, that’s 3 delicious meals in one! I try to use recipes that will make or use one meal into another…it saves money.

We love to roast a chicken one night, then shred it and have enchiladas the next night, then use the carcass for a stock for chicken and dumplings. Tons of leftovers too!

Favorite quick & easy dinner is tacos or taco salad, I always have the supplies on hand. I love to coupon, stockpile & meal plan. Keeping my pantry organized (my personal goal for this week) helps to make sure I use up items before they expire.
