All You Eat Well, Save Big Cookbook

I’m a foodie at heart, so I love trying out new recipes. When I heard that All You, my absolute fave magazine, was publishing a cookbook, I jumped at the chance to review it. All You Eat Well, Save Big is filled with over 140 meals under $2.50 per serving, this is a fantastic resource for those of us trying to live within a budget. These recipes don’t skimp on meat, and are full of flavor.

I love the fact that the recipes have a reasonable number of ingredients. My eyes just glaze over when I see those ingredients lists that are ten miles long. And I also enjoyed the Smart Tips that are shared throughout the book, giving advice on choosing the perfect pot, quick and easy side dishes, how to pick the perfect produce, and much more.

    One of our favorites is hamburger gravy on rice or mashed potatoes. Just fry up the meat with onions, drain ( leaving a little fat) thicken, add spices to taste. Quick, comforting and delicious !

    chicken and spinach pasta
    Marinate 1 lb chicken breasts in lemon juice for 20 minutes then bake until cooked through. Cut into 1 in pieces and set aside.
    Cook whole grain pasta of your choice and drain. I use penne.
    In a large skillet, add 1 can low-sodium chicken broth and 1 box frozen spinach. Let simmer for ten minutes or until spinach is fully cooked.
    Add pasta and chicken to skillet. Let simmer for about five minutes, top with parmesan cheese.

    This pork roast is our favorite. I usually take leftovers, put them in a slow cooker with barbeque sauce, and make pulled pork. It’s an inexpensive cut of meat that yields 2 meals.
