All You Eat Well, Save Big Cookbook

I’m a foodie at heart, so I love trying out new recipes. When I heard that All You, my absolute fave magazine, was publishing a cookbook, I jumped at the chance to review it. All You Eat Well, Save Big is filled with over 140 meals under $2.50 per serving, this is a fantastic resource for those of us trying to live within a budget. These recipes don’t skimp on meat, and are full of flavor.

I love the fact that the recipes have a reasonable number of ingredients. My eyes just glaze over when I see those ingredients lists that are ten miles long. And I also enjoyed the Smart Tips that are shared throughout the book, giving advice on choosing the perfect pot, quick and easy side dishes, how to pick the perfect produce, and much more.

    My family’s favorite recipe is Minestrone Burgers. Brown some hamburger, add Campbells Minestrone Soup and cook until warm. Place a slice of bread on a plate, pour the mixture over it, then top with cheese. It’s good, it’s cheap, and it’s easy. If you try it and like it send me an email. kellikramer05 at gmail dot com.     Our fave recipe right now is breakfast burritos. The way we make them varies depending on what we have on hand. But I scramble eggs with a little salsa, onions and green peppers if we have them. Then towards the end add cheese and other flavorings, or sausage or crumbled bacon and serve on tortillas.

    One of my families favs is Hamburger TaterTot Casserole. We use a lb of ground turkey/beef, chopped onion, cream of mushroom soup, and top with tater tots and cheese!

    My favorite comfort food is Tamale Pie. I always seem to have all the ingridients in the house and my children love it. Plus, it’s cheap to make!
    Ingredients:
    1 pound lean ground beef
    1 cup chopped onion
    1 large green bell pepper, chopped
    1 large can (15 ounces) tomato sauce
    1 large can (28 ounces) tomatoes, cut up
    1 can (16 ounces) whole kernel corn, drained
    1 small can (4 ounces) sliced ripe olives
    2 cloves garlic, minced
    1 tablespoon sugar
    1/2 teaspoon salt
    2 teaspoons chili powder
    dash black pepper
    1 cup grated Cheddar or Mexican blend cheese
    .
    Crust:
    3/4 cup yellow cornmeal
    1/2 teaspoon salt
    2 cups cold water
    1/2 teaspoon chili powder
    1 tablespoon butter or margarine
    1/2 cup grated Cheddar or Mexican blend cheese, for topping (optional)
    Preparation:
    Brown ground beef with onions and green pepper; drain well. Add tomato sauce, tomatoes, corn, olives, garlic, sugar, salt, chili powder and black pepper. Heat to boiling; reduce heat and simmer, uncovered, for about 20 minutes, or until thickened. Add cheese; stir until cheese is melted. Set filling aside.
    In a saucepan, combine cornmeal, salt, water and chili powder. Cook over medium heat, stirring constantly, until thick. Stir in butter. Spread half of the mixture into a baking dish, about 12- x 8-inches. Spoon filling over bottom crust; spoon remaining cornmeal mixture over filling. Bake at 375° for 45 minutes. If desired, sprinkle 1/2 cup cheese over the crust about 5 minutes before casserole is done.
    Serves 6.
