All You Eat Well, Save Big Cookbook

I’m a foodie at heart, so I love trying out new recipes. When I heard that All You, my absolute fave magazine, was publishing a cookbook, I jumped at the chance to review it. All You Eat Well, Save Big is filled with over 140 meals under $2.50 per serving, this is a fantastic resource for those of us trying to live within a budget. These recipes don’t skimp on meat, and are full of flavor.

I love the fact that the recipes have a reasonable number of ingredients. My eyes just glaze over when I see those ingredients lists that are ten miles long. And I also enjoyed the Smart Tips that are shared throughout the book, giving advice on choosing the perfect pot, quick and easy side dishes, how to pick the perfect produce, and much more.

    A family favorite of ours is my Mom’s Mac & Cheese. It isn’t the healthiest so we don’t eat it often!

    For every lb of elbows, she uses 1.5 lbs of Cabot Extra Sharp Cheddar Cheese! A little milk and flour and then cheese on top to make it extra crispy!

    We got this Thanksgiving turkey & gravy recipe from Parade mag about 9 years ago:

    Turkey
    Brine:
    • 1½ cups kosher salt
    • 1 cup sugar (optional)
    Turkey:
    • 1 turkey (11-14 lbs), thawed, giblets, neck & tail removed & saved for gravy, excess fat removed
    • 2 med onions, coarsely chopped
    • 1 carrot, coarsely chopped
    • 1 celery stalk, coarsely chopped
    • 3 tbsp melted butter
    → Mix salt, sugar & 1½ gallon cold water in clean bucket or stockpot big enough to hold the turkey. Add turkey & refrigerate 12-15 hours. Remove from brine, rinse thoroughly in cold water & pat dry.
    → Put oven rack to lowest position. PREHEAT oven to 400ºF. Place half the chopped onion , carrot and celery mix into turkey cavity. Tie legs together and secure wings. Scatter remaining veggies in a large roasting pan. Pour 1 cup water over veggies. Place turkey on V-rack, BREAST-SIDE DOWN. Brush back & sides with melted butter. Roast for 45 minutes.
    → Remove pan. Baste turkey’s back with veggie drippings, adding water to pan to loosen, if necessary. Using paper towels in each hand, turn turkey onto side with one leg and wing up. Brush exposed areas with drippings. If necessary, add water to pain, to keep veggies from burning. Roast 20 min.
    → Remove turkey from oven. Turn breast-side up and baste. Roast 35-55 minutes, until meat thermometer in breast reads 160-165º and leg/thigh reads 170º. Add water to veggies to prevent burning. Let turkey rest on platter 30 min before carving. Enjoy with Rob’s gravy!
    Gravy
    • 2 tsp vegetable oil
    • Giblets (liver discarded), neck & tail from turkey, cut into 1” pieces
    • Reserved turkey roasting pan with drippings
    • 1 cup dry white wine or vermouth
    • 3 tbsp cornstarch or 6 tbsp flour
    *** Do not add salt. For richer broth, add 1-2 cut up chicken thigh(s) with giblets. For thickened au jus-style, use the cornstarch. For thicker, traditional gravy, use the flour. Use water in place of wine, if desired.
    → Heat oil in Dutch oven on medium-high. Add giblets, neck, tail & onion; sauté until giblets lose raw color and onion softens, ~5min. Reduce heat to low, cover & cook until turkey parts release their liquid, ~20 min. Add 1 quart water, bring to boil, cover & simmer, partly covered, to make a flavorful broth. Strain, then return broth to pan. There should be ~3 cups (can be refrigerated overnight). Skim fat from broth.
    → Set pan with drippings over 2 burners on medium-high. Add wine; cook, loosening pan drippings with wooden spoon, until boiling. Strain drippings into broth in Dutch oven, pressing on veggies to release their flavor. Bring broth mixture to simmer, mix cornstarch/flour with ½ cup water and stir into broth. Continue simmering until lightly thickened. Makes ~4 cups. Enjoy with Rob’s Thanksgiving turkey!

    It’s the BEST!!

    My husband and I really love a sausage, fennel, and artichoke pasta recipe. The sauce is light, made from whipping cream, white wine, and chicken broth. Yum! I’m ready for some now…

    My family’s fave recipe is my chicken fajitas recipe! You just get the fajita seasoning pack at Walmart, add some bell peppers, onions, and some chicken and voila! Delicious chicken fajitas!
