New York Times bestselling author Stephanie O’Dea has a new book, More Make it Fast, Cook it Slow, where she breaks down slow-cooker meals into three categories of frugal meals: $7, $10 and $15 meals, and these meals aren’t your standard slow-cooker fare with options ranging from mint chocolate fondue to leg of lamb with rosemary and lemon.
I’ve always been a fan of using my slow-cooker, but I’ve rarely ventured beyond the tried and true recipes that my mom passed on to me when I got married. I love that Stephanie’s book encourages getting outside of your comfort zone with the crock pot. I would have never considered making lasagna in my slow-cooker otherwise!

I bought four cans of John McCann’s Steel Cut Irish Oats off of Amazon a few months ago… and then I, ahem, forgot to cancel my Subscribe & Save order, so I ended up with eight cans of oatmeal and not a clue how to cook it easily. So I was really excited to try Stephanie’s ingenious method for making them in the crock pot.
I threw all of the ingredients together last night and simply let it cook while we were fast asleep. Yes, apparently I slept right through a possible tornado touching down nearby! Anyhow, it was nice to wake up to a hearty breakfast that simply needed served with a little fruit and milk on top.
I’ll probably do a little tweaking to the recipe because I’ve always preferred my oatmeal made with milk, so I missed that bit of richness that milk adds. I’m guessing that Stephanie used more water to keep the price of the recipe under $7, and it’s perfectly delicious as is — that’s just my preference.

Chicken in broth, roast, and apple sauce. Although the apple sauce must be made in its own pot other wise it will taste like meat. Any suggestions on how to avoid this!

ENTRY: I love how pot roast comes out in a slow cooker. However my favorite thing to make in a slow cooker is mini meatballs in sauce for parties, stays hot, and is easily transported.

Try this One, it is really good & Easy!
Old World Sauerkraut Dinner
3 strips bacon, cut into small pieces
2 small potatoes, cubed
2 small apples, cored, cubed
2 pounds Polish sausage, cut into pieces
3 teaspoons brown sugar
1 1/2 teaspoons all-purpose flour
1 1/2 teaspoons caraway seeds
2 (27 ounce) cans sauerkraut
1/2 cup water
Fry bacon and Polish sausage until crisp; drain. Add flour to drippings and blend well. Stir in sauerkraut; mix well. Place sauerkraut mixture, bacon and sausage pieces in crock pot. Add all other ingredients; stir together thoroughly. Cover and cook on LOW for 7 to 9 hours or on HIGH for 3 to 4 hours.
