Perdue recently became the first poultry company to receive the USDA Process Verified seal. Displaying the seal means the USDA has verified that Perdue products containing the seal contain meat from chickens raised without cages and/or fed an all vegetarian diet, something Perdue is very excited about.
To help celebrate Perdue’s new USDA seal, they are hosting a contest for a chance to win $4,000 and FREE chicken for a year. For a chance to win, submit your video to Perdue showing them your special chicken cooking skills and talents. The grand prize is $4,000 and a year’s supply of chicken. First place will receive $1,000 and a year’s supply of chicken, and second place will win the year’s supply of chicken.
One lucky Deal Seeking Mom winner will receive a Perdue prize pack that includes:

- (5) $5 Perdue coupons
- Kathleen Daeleman’s recipe book Cooking Thin with Chef Kathleen
- Baking sheet

Vive La Chicken: A family recipe of a casserole that my mom made when I was little. When she made this it was such a TREAT because it was the ONLY time we ever got chicken! I asked for it every year on my birthday. I always thought it was this big laborious dish, but I found out decades later that my mom just didn’t like chicken! Now I make it and think of my mom (who has passed on.) Still the best treat!!!

Currently, I love grilled chicken over a salad, but I can’t think of a way to prepare chicken that I don’t like. I love it floured, breaded or rolled in oatmeal; baked, fried or deep fried. I love it parmesan, cacciatore or marsala. I love it chinese style with almonds or Kung Pao or Sweet and Sour. I love it roasted or BBQ. I love hot wings or cold sandwiches. I love it with mayo or cranberry relish or honey mustard. I love it for breakfast, lunch or dinner. I also love your blog. Thanks for all you do.

I love fried chicken, but my specially to make is chicken Parm or chicken soup!

My favorite is my own recipe of Chicken, bacon, and Baby bella fettuchini. I slice my whole baby bella mushrooms in half and sautee in butter and garlic until golden brown. Cut my chicken breasts into 2″ squares and sautee in a Tbsp. of butter, Extra Virgin Olive Oil, and garlic until golden brown. Remove from pan and in same pan make my own cream sauce. Adding in whipping cream, simmer until you see little bubbles around the outer edges of cream, season with garlic salt, parsley, salt & pepper to taste and simmer on low until slightly thickened and bubbly. Add in roughly 2-3 Tbsp. of Kraft Parmesean Cheese (powdered shaker cheese) and stir about a minute until thickened. If you dip a spoon into it, then turn the spoon over and rub a line lengthwise with your finger on the back of the spoon you will know it’s ready if the line remains and does not run back together. Place chicken and mushroom mixtures back into the pan, gently mix and simmer for a few seconds. Remove from heat and lightly toss over your favorite pasta (we love linguini but you can use virtually any pasta you like. Bucatini is fun and sometimes will use it.). The sauce is 110% better and so much tastier than any of that thick clumpy jar sauce you purchase in the store. This does not weigh heavy on your tummy and everyone in our household LOVES it (my husband who is rather picky devours it and always has seconds. our 3 yo son loves it as well. It’s definitely a crowd pleaser!). Be sure you serve with a piece of garlic bread to get every last drop of sauce off your plate. ;o)

Silly me, forgot the bacon details! Bacon is optional, at the end I like to top each serving with a sprinkle of crispy bacon (you could also use Italian bacon as well) as this gives it a nice overall appearance (and what guy doesn’t like bacon??!? If I would allow it both of my fellas here at hoem would eat it with every meal, lol).
