Now that school has started up again, quick and simple dinners are a must. And with pantry staples like Hungry Jack Mashed Potatoes, you can get dinner on the table in no time at all.
Or maybe you’re just looking for a simple and easy dessert? Hungry Jack has you covered there too!
Toffee Icebox Cake
Ingredients:
2 cups heavy cream, chilled
1/4 cup powdered sugar
3/4 cup Hungry Jack Original Syrup, divided
1 (11 oz.) box vanilla wafers
1 cup toffee baking bits
Directions:
- Beat heavy cream in a large bowl with an electric mixer until soft peaks form. Add powdered sugar and 3 tablespoons of syrup, beating until stiff peaks form.
- Arrange a layer of 19 to 20 wafers in bottom of an 8-inch springform pan. Drizzle with 2 tablespoons syrup. Spread with 1 1/4 cups whipped cream mixture, making sure all cookies are covered. Top with 1/4 cup toffee bits. Repeat with remaining wafers, syrup, whipped cream, and toffee bits to make 3 more layers, ending with toffee bits.
- Cover with plastic wrap. Chill overnight. Remove side of pan. Drizzle cake with 2 tablespoons of syrup just before serving.

My pantry essential is Hungry Jack mashed potatoes.
I use them to make Lefse for my husband. Lefse was a big part of his child hood as his Grandmother used to make this for him (they are from Sweden) and now that she is no longer with us, I have taken over making them. When our daughter is older, I hope to teach the recipe to her and keep the tradition going!
Lesfe was also an amazing staple for my hubby and his Marine unit when they were deployed to Iraq. With only a few ingredients it is quick to make but lasts a long time and brings a feeling of a home cooked treat to those far away.
