Strategies for Stretching Our Food Budget

I don’t know about you all, but there’s something about Tax Day looming on the horizon that inspires me to buckle down and clean up our finances. Admittedly we’ve gotten a little lax with our spending, but also as our children continue to grow, our grocery bill is creeping up along with them. So in an effort to trim our food budget, I’m going to be focusing on some of these tactics:

  • I’m making more staples at home. We’ve been enjoying fresh bread, courtesy of my Artisan Bread in Five Minutes a Day cookbook, slathered with homemade butter (made in under 10 minutes!). I’ve also continued to make my own homemade Bisquick mix and try to cook from scratch whenever possible.
  • Snacks are a big challenge for us with the kids. They love the Clif Kid Bars, but the five of them can go through them in no time flat, and they’re not exactly inexpensive. We’re encouraging them to try eating more fresh fruit for snacks by having it cut up and readily available in the refrigerator, and Cuties are always a hit (however, finding a good batch of them this year has been a disappointing endeavor). This is still a work in progress, so I’m hiding the Clif Bars and rationing them out in the meantime.
  • When we do choose to eat out, we always make sure we’re getting the most for our money by utilizing loyalty programs, coupons, and special promotions. A smart choice for our family is always IHOP. My husband and I can choose from their 7 for $7 meal offerings, and the kids can choose from their reasonably priced kids’ menu. Plus I hate bringing home leftovers because they typically go uneaten, and I never have to worry about them not cleaning their plates here!
  • We’ll be joining a CSA again this year. Yes, it can seem like a lot of money out of pocket up front, but our weekly CSA baskets were more than enough for our large family each week, and we’re still enjoying some of the excess fruit in our smoothies. Plus having a set amount of money already deducted for produce makes budgeting a little easier.
  • The whole family is drinking more water. We do purchase bottled water for the kids to easily grab when they’re playing outside, but for the most part at meals and during the day, we’re all drinking tap water from the refrigerator dispenser. My husband and I like to squeeze a little lemon into ours, but we’ve discovered that they kids are perfectly content with a big glass of ice water. The only downside is our ice maker is having trouble keeping up with the seven of us, so I’ve been trying to turn on the ultra plus feature at night before we go to bed and emptying it into a bin first thing in the morning so we always have some extra on hand.

By this time I think we all have a good handle on how to save money with coupons, but lately it seems like the number of food coupons is dwindling. Did you notice how many health and beauty and cleaning product coupons were in the recent inserts?

Rice Krispie Treats with a Valentine’s Day Twist

Yesterday I spent the afternoon making a mess these cute white chocolate heart-shaped Rice Krispie Treats with my three youngest kiddos. We had a blast, and they were absolutely delicious!

A Lazy Afternoon of Fun Courtesy of Wilton {Halloween Cupcakes}

Yesterday we had a bit of a lazy Sunday afternoon for the first time in ages, so I thought it would be fun to whip up a batch of cupcakes for the kids to decorate. Typically I prefer to cook from scratch whenever possible, but last minute baking sessions like this call for a little Betty Crocker action… So we threw together a boxed devil’s food cake batter.

Frosting cupcakes has never been my forte, but after digging around on the Wilton website, I learned that a large open star frosting tip makes quick and easy work for this purpose. Specifically, they recommend the Wilton #32 tip. I’ll admit that I was a bit skeptical of whether or not I could pull this off, but I mixed up some buttercream icing and set to work.

I’m pretty proud of how they turned out! I don’t think I’ll be winning Cupcake Wars anytime soon, but they’re certainly much lovelier than when I attempt to frost my cupcakes with a knife.

Wilton sent me a variety of Halloween-themed decorations, much to the delight of my five kiddos. The colorful sprinkles mixed with candy pumpkins and bats were a total hit, and the pumpkin and ghost cupcake toppers were the perfect final touch.

Though they made quite the mess, watching their little fingers carefully place the sprinkles and candies on the frosted cupcakes made it all worthwhile. Sure they went a bit heavy on the sprinkles, but I’m pretty sure in their minds that’s the best part.

And how did they taste? Well, my littlest wasted no time at all in biting into one. He proclaimed it to be “Totally ‘licious!” I wouldn’t call him a cupcake connoisseur, but he knows what he likes, LOL.

DIY Yarn-Wrapped Pumpkins And Gourds

I just love Pinterest — it’s such a fantastic source of inspiration! After seeing dozens of takes on yarn-wrapped pumpkins, I decided to make an attempt at them myself.

Back to the pumpkins… I’m so happy with the way they turned out! The texture looks so pretty, and the colors look really nice together. Here’s what they looked like before:

You can pick up these inexpensive pumpkins and gourds at Walmart for just $0.97 each! I found them up mixed in with the Halloween decor, and they have a variety of shapes, so I grabbed some of each.

And of course you’ll need some yarn. I chose a fatter gauge yarn for the body and a smaller gauge for the stems. One skein goes a long way — I could have made many more than just six.

Finally you’ll need a glue gun and glue sticks. Be sure to look for a dual-temp hot glue gun if you don’t already own one. The low setting is perfect for this task, and you’ll save yourself a few blistered fingers (yes, I’m speaking from experience).

Once you have all of your supplies, simply wrap the pumpkins with your choice of yarn, glueing as necessary. I found it easiest to start at the neck and work my way to the bottom. After I finished with the bodies, I went back and wrapped all of the stems with the smaller green colored yarn.

As I mentioned, I have plenty of yarn left over, so I’m planning to go back and buy a few more pumpkins and gourds. I think on my next attempt I’ll add even more texture by varying the wrapping method. I’ve seen others wrap a little less precisely than I did, twist more than one strand of yarn, make rosettes — there are so many possibilities.

DIY Wild Bird Seed Halloween Ornaments

We’ve had a bird feeder in our backyard for quite some time now, and my kids really enjoy watching the many types of birds that stop by and helping us make sure it stays full of seeds for them. I came across this simple and fun craft recently for bird seed ornaments, so I figured we’d give it a try.

I enlisted my lovely assistant, Addison, to help me gather up the “ingredients.”

You’ll need flour, corn syrup, water, and wild bird food, plus some yarn or string to hang them with and cookie cutters to shape the ornaments. I used Pennington Wild Finch Blend for our project, and the cookie cutters can be picked up in the seasonal section at Walmart for a steal!

Making the bird seed ornaments was super simple. To start, you just mix together 3/4 cup of all purpose flour, 3 tablespoons light corn syrup, 1/2 cup water, and 4 cups of bird seed. Stir until they’re thoroughly combined.

Next, fill the cookie cutters with the bird seed mixture, making sure to press it in tightly. I covered a cookie sheet in parchment paper to keep them from sticking, but you could also just spray a cookie sheet lightly with non-stick cooking spray. You may also want to consider spraying the cookie cutters as well.

Use a stick or a toothpick to create holes for the string so you can hang your ornaments when they’re finished.

Allow the ornaments to dry overnight, flipping them regularly to ensure they dry completely on both sides. Then you just pop them out of the cookie cutters, add some colorful string, and your ornaments are complete!

Ingredients:

  • 3/4 cup all purpose flour
  • 3 tablespoons light corn syrup
  • 1/2 cup water
  • 4 cups Pennington Wild Finch Blend

Directions:

  1. Mix together the flour, corn syrup, water, and bird seed thoroughly.
  2. Firmly press mixture into cookie cutters, make a small hole for the string, and allow to dry overnight. Turn them often to allow them to dry on both sides.
  3. Pop them out of the cookie cutter and tie a 12″-20″ string through them. Hang the ornaments for birds to enjoy!

Note that this mixture will make about 16 medium to large sized ornaments, so you may want to pull out some Christmas cookie cutters as well and tackle two holidays at once.
