Easy-Peasy Salsa Chicken in the Instant Pot

Have you ever had to deal with frequent heartburn? Let me tell you — it really sucks. For me, it started when I was pregnant with my first. I was fortunate that it disappeared soon after giving birth, but with each successive pregnancy, it hung around just a little longer.

By my fifth pregnancy, even WATER gave me heartburn. I mean, how weird is that? Bottles of those chalky calcium carbonate antacids were my constant companion, but they never really quashed that burning sensation entirely. And it was a miserable experience trying to choke them down.

Thankfully, these days I only get heartburn a couple of times a week. But that’s just enough to make it pretty annoying. However, I know spicy foods, like this yummy salsa chicken, are often a trigger. So I can head it off before it even starts with a dose of Omeprazole ODT!

What does that ODT stand for? Well, it’s an orally disintegrating tablet — that comes in a pleasant strawberry flavor. You simply place the tablet on your tongue, and it quickly dissolves. No water necessary! Which makes it super discreet and convenient to take.

For best consumption experience, allow tablet to dissolve on your tongue. Do not chew Omeprazole ODT tablets or dissolve in liquid. Use as directed, taking 1 dose every 24 hours for 14 days to complete the treatment. You should not take Omeprazole ODT for more than 14 days unless directed by your doctor.

Omeprazole ODT is intended for frequent heartburn sufferers (2 or more days a week). Although some feel relief within a day of the first dose, it may take up to 4 days to feel the full effect. Omeprazole ODT is not intended for immediate relief.

I pick up the Equate brand at Walmart — it works just as well as the national brands, but it’s WAY more affordable. And I LOVE keeping more money in my wallet. Don’t you?

Speaking of saving money, Walmart always has the best prices on the ingredient for this salsa chicken. So while I’m picking up a box of Equate Omeprazole ODT, I can also grab some chicken breasts, restaurant-style salsa (I like the refrigerated brand in the produce section), chicken stock, and taco seasoning all at bargain prices. You won’t believe how easy this recipe is!

I make this salsa chicken in my Instant Pot, which ensures juicy and tender shredded chicken in just about 20 minutes. Simply pour the chicken stock into the insert, place the chicken breasts on a trivet, and top each breast with a mixture of salsa and taco seasoning. Set the Instant Pot for 15 minutes at high pressure, and then let the pressure release naturally for 5 minutes before releasing any remaining pressure.

I like to turn on the sauté function to reduce the remaining liquid while I shred the cooked chicken. Then I mix it all back together with a little more fresh salsa, and voila — and easy and delicious protein that’s super versatile! Eat it as is, use it in meal prep, make tacos, make enchiladas… I could go on and on. My kids adore this easy recipe, and I think your family will, too!

Easy-Peasy Salsa Chicken in the Instant Pot

Ingredients:

  • 4 large boneless, skinless chicken breasts (about 2-lbs.)
  • 3/4 cup chicken stock
  • 1 (16-oz.) container restaurant-style salsa, divided
  • 1 tablespoon taco seasoning
  • 1 lime, cut into wedges (optional)

Instructions:

  1. Pour the chicken stock into the Instant Pot insert. Set the chicken breasts on a trivet inside the insert.
  2. Stir taco seasoning into salsa and mix well. Top the chicken breasts with about 3/4 of the salsa mixture, reserving the remaining 1/4 for later.
  3. Cook at high pressure for for 15 minutes.
  4. Allow to NPR for 5 minutes. Release any remaining pressure, remove the chicken breasts from the Instant Pot, and shred. While shredding the chicken, turn the Instant Pot to sauté to reduce the remaining liquid. Stir the shredded chicken back into the remaining liquid, along with the reserved salsa. Serve warm.
