½ cup maraschino cherries, drained and finely chopped
2½ cups all-purpose flour
½ cup granulated sugar
1 cup cold butter, cut into pieces
12 ounces white chocolate baking squares with cocoa butter, finely chopped
½ tsp almond extract
2 to 3 drops red food coloring, optional
2 tsp shortening
white nonpareils and/or red edible glitter (optional)
1Preheat oven to 325°F. Line two baking sheets with parchment paper.
2Spread cherries on paper towels to drain well. Chop finely; set aside.
3In a large bowl, combine flour and sugar. Using a pastry blender, cut in the butter until mixture resembles fine crumbs. Stir in drained cherries and 4 ounces (2/3 cup) of the chopped chocolate. Stir in almond extract and, if desired, food coloring. Knead mixture with your hands until it forms a smooth ball.
4Shape dough into ¾-inch balls. Place balls 2-inches apart on ungreased cookie sheets. Using the bottom of a drinking glass dipped in water and then sugar, flatten balls to 1½-inch rounds.
5Bake 12 to 14 minutes or until centers are set. Cool for 1 minute on cookie sheet. Transfer cookies to wire rack and let cool.
6 Place remaining chocolate and shortening in a pyrex bowl or measuring cup. Heat and stir in 30 second intervals in the microwave until melted and smooth. Dip half of each cookie into chocolate, allowing excess to drip off. If desired, roll dipped edge in nonpareils and/or edible glitter. Place cookies on waxed paper until chocolate is set.

My favorite Christmas cookie are the Mexican Wedding Rings. They are called a whole bunch of different things… but they are the shortbread type ball covered in nuts and powdered sugar. Yum! I am a first grade teacher, and we make them together as a class during our snow unit since they look like snowballs.

Candy Cane Christmas Cookies:
* 1 cup butter
* 1 cup sifted confectioners’ sugar
* 1 egg
* 1 1/2 teaspoons almond extract
* 1 teaspoon vanilla extract
* 2 1/2 cups all-purpose flour
* 1 teaspoon salt
* 1/2 cup crushed peppermint hard candies
* 1/2 cup white sugar

DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a large bowl, combine butter, confectioners’ sugar, egg, almond extract and vanilla extract. beat until smooth. Mix in flour and salt.
3. Roll into 4 inch strips, place on baking sheet. Curve top down to form handle of cane.
4. Bake in preheated oven for 9 to 10 minutes. While still warm, remove from pan and sprinkle with candy and sugar mixture.

Christmas M&M Cookies:
Mix together one box yellow cake mix, one stick of softened butter, 1 TBS water, and 1 egg. Add one bag of Christmas colored M&M’s. Drop on lightly greased cookie sheet and bake for 10 minutes at 350 degrees. ENJOY!! This is an EASY recipe to double, triple, quadruple…!

My favorite cookie recipe is so simple and so yummy.
Peanut Butter Cookies
1 cup of peanut butter
1 cup of sugar
1 egg
Mix all 3 ingredients together and bake at 350 for about 9 minutes or so depending on your oven.
To make these cookies even more yummy I like to set a Hersheys Kiss in the middle of each cookie right after they come out of the oven.

my favorite Christmas time cookie is definitely sugar cookies. I love making these with my kids in all kinds of cookie cutouts. My close second is snickerdoodles made with yellow cake mix just add vanilla extract and roll in cinnamon and sugar.

Chocolate Star Peanut Butter Cookies
Ingredients:
1/2 C Sugar
1 Egg
1/2 C Packed Brown Sugar
1 3/4 C Flour
1/2 C melted Butter
1 tsp Baking Soda
1/2 C Smooth Peanut Butter (JIF)
1/2 tsp Salt
2 TBSP Milk
1 tsp Vanilla
Chocolate Stars
Extra Sugar for rolling
Instructions:
Preheat oven to 375. Mix all ingredients except chocolate stars and extra sugar. Roll into balls. Roll in extra sugar. Place 2 inches apart on ungreased cookie sheet. Bake 10-12 minutes. Press *chocolate star in center. Makes 4 dozen.
* You can substitute any chocolate candy
