Join me every week for Win-It Wednesday, with 24-hour giveaways just for you!
If you’re the person who never knows what’s for dinner until the very last minute, you’ll love the Food Network Magazine Great Easy Meals cookbook, with 250 quick recipes to spice up your dinner from drab to fab.
I love Food Network Magazine, so I was excited to see what their latest book had to offer. As promised, it delivers lots of fast and easy recipes with additional kitchen tips from the stars sprinkled throughout. I especially love the visual recipe index in the front of the book and the Mix & Match sections at the end of each chapter that give you a customizable recipe.
I was also thrilled that they included a number of tasty side dishes. We’re perfectly happy eating basic grilled chicken, pork, and burgers frequently during the warmer months if we can pair them with a variety of sides.
We paired this quinoa with some simple grilled chicken for a fast, easy, filling and tasty meal tonight! It’s a variation on the Israelis Couscous with Raisins recipe. We didn’t have any couscous, so I improvised — and the resulting side was delicious!

I try to plan meals a week in advance. We’re so busy, taking a few extra minutes to plan, it really pays off!

I love to experiment so plan to follow at least one new recipe each week. I always ask for input and make decisions based on what we have in stock, what’s on sale and how easy or difficult the meals are to prepare depending on how much is going on for the week. Usually plan one to two weeks of menu’s at a time.

I always think about the food I already have in my house and if we’ve eaten fish at least once this week, or how many times we’ve eaten chicken. Our diet consists mostly of those two main dishes. Then sometimes we just have breakfast for dinner, or picnic type of foods, such as hot dogs or sandwiches…! :) Vegetables are always a big thing too – and that usually consists of something with broccoli in it!

I ask my 10 yr old son what he wants for dinner — mac and cheese, pasta, tacos, baked potato w/ chili beans and veggies — but the options are limited. Single mom who has too many other things to do! Plus, we are vegetarian, so no meat planning is required.

Although it sounds strange that our stomaches don’t dictate what we eat, it’s our stockpile which does. I often go on the All Recipes site and do “ingredient search” entering what I have and out comes a list of recipes I can choose from! It’s great and we are well fed inexpensively using lowest cost items after sales and coupons! :)
Norma C
I’m with you, Lynn. I check out my stockpile in freezer/cupboards, or my leftovers and try to stretch that budget. Or, I check the food ads and see what’s on sale.

I try to remember to think about dinner the night before so I have a “plan”. Sometimes it doesn’t work.
Shelley
First it depends on if I feel like cooking : ) If so, I look to see what we have available in the house. I also look to see if there are any left overs or food that needs to be eaten or used first.
