I cut both ends off a pineapple, quarter it lengthwise, trim off the core, slice it off the skin (though I keep the skin, to serve the pineapple on- after slicing off the skin I p[ut the flesh back on the skin and cut it on top of the skin), cut the pineapple flesh down the center lenghtwise, then cut bite-sized chunks by cutting it the other direction. Stick toothpicks in each chunk, then cover with sugar-free black cherry Jell-o. 1 pack per pineapple. Wait a couple minutes and serve. It’s one of my favorite things to bring for potlucks!
I’ve experimented with variations, but sugar-free is best and black cherry is best. The lime, etc is just too much citrus, strawberry is ok.

I love to make the sugar free instant chocolate and mix it with sugar free cool whip to make mousse. Yum!

I make a homemade pound cake, and add a box of the sugar free strawberry jello to make it strawberry flavored. Ice it with fat free Cool Wip, cut up fresh strawberries and blueberries to top, and you have an awesome cake for the summer – one of my girls’ favorites!
