When I saw this recipe I thought that it was the perfect solution to my annual Thanksgiving dinner leftover problem. See, I always have at least 10-14 people over and get a big bird with all the fixins, but everybody knows there is NEVER enough stuffing left over for everybody to take some home, so I made about a dozen and a half of these in advance to give out with a little leftover package. They worked PERFECT and EVERYBODY loved that they got stuffing to take home! My daughter said she used them to make turkey and stuffing sandwiches the next day – just sliced them in half like you would a regular muffin.
