In an ideal world, we’d sit down to dinner together as a family every weeknight — and we do manage this most nights during the summer. But my reality the rest of the year is kids coming and going all evening long for various work, school, and sports obligations.
Generally, on these evenings, I try to prepare a dinner that reheats well, so the stragglers can eat at their convenience. But occasionally one of the kids wants to eat before their evening activities, so I like to keep some simple meal kits on hand that don’t take much time to prepare — like the new Tyson® Fully Cooked Dinner and Entrée Kits that I found in the freezer aisle at Meijer.
Talk about weeknight meals made easy… My kids adore these kits! Not only are they totally delicious, but they’re easy enough to make, that all but my youngest can prepare them all on their own. Each Tyson Fully Cooked Meal Kit contains a protein and vegetable that are fully prepped, cooked, and then flash frozen and vacuum-sealed into a tray for peak freshness with zero freezer burn. All you have to do is reheat them!
One of our fave kits is the Tyson Crispy Chicken Pomodoro, which contains two crispy seasoned chicken breasts with seasoned Italian flat beans and a spicy red sauce to finish it all off. It received rave reviews from all of my kids for its bold flavor! And I appreciate Tyson’s commitment to producing meals that are minimally processed with no artificial ingredients added.
Each package contains two generous servings — although my 15-year-old football player can polish off an entire kit by himself. Teenage boys! Man do they know how to put a dent in your grocery budget… Good thing these kits are budget friendly!
Preparing the Tyson Crispy Chicken Pomodoro meal kit really couldn’t be simpler. You just pop the chicken breasts into the oven at 475 degrees for about 20 minutes. For easy cleanup, I recommend lining your baking sheet with aluminum foil. That’s one less pan to wash! And I’m all about reducing the amount of dishes I have to do every night.
While the chicken is baking, you can cook the Italian flat beans. The beans are pre-seasoned and just need to steam with a little bit of water. Place them in a skillet over medium heat with about a tablespoon of water and cover for five minutes. Then remove the lid and sauté until warmed through.
When the chicken and beans are just about done, heat the spicy red sauce packet in the microwave for about 45 seconds, and voila! Plate the chicken and beans, squeeze the sauce over top, and dig in. SO tasty!
