Quesadillas! Leftover chicken, steak, or pork mixed with whatever shredded cheese we have (cheddar, jack, etc) and topped with salsa and sour cream!

My favorite inexpensive meal is grilled cheese and tomato soup. It is very inexpensive and very tasty! In addition I add carrot puree to the soup add more vegetables, and even tiny pieces of chopped pepper to the grilled cheese. So yummy tasty!

Fave inexpensive meal is tuna/chicken/ground meat noodle casserole. 1 can cream o’mushroom fill same can with milk – or 1/2 can of water 1 box o’noodles cooked mix with 1 can tuna or whatever above and cover with cheese on hand – bake until cheese is melted and browning a bit at 350

Favorite easy flavorful cheap meal is a little chicken and beans and rice with any kind of sauce, can use same ingredients and change the sauce so not bored!

My Italian father-in-law introduced me to pasta faszoule (?)….a bag of dried white beans, 1 lb. box of small pasta shells, some chicken bouillion, some diced carrots, celery, garlic. Top off with olive oil, some parm. cheese and pepper. Even my toddlers love it….and it makes an enormous potful….we end up tupperwaring it for lunches/dinners….esp. in the winter. Yum!

mine is enchiladas. we use leftover chicken, tortillas, and cheese from meals earlier in the week, and once I add sour cream, I’m in heaven.
my husband’s favorite is breakfast for dinner.

my favorite inexpensive recipe is spaghetti. my husband could eat it 2 times a week and my toddler loves it. we use wheat noodles and i make my own sauce. add some steamed corn kernels and garlic bread and a meal in under 30 minutes.

Though spaghetti is definitely on the short list of quick and easy, I think the main things I always fix when it’s really crunch time is pancakes–there’s nothing better than breakfast for dinner. :-) The pancakes themselves are pretty cheap–mine are made with just flour and milk so they’re more like fried bread than pancakes since there’s no eggs in them. If I have bacon on hand that gets fried up too and we’re all set.
