Spaghetti made with whole wheat noodles, freshly steamed squash and zucchini, and garlic bruschetta. Yum! Stocking up on spaghetti noodles, canned tomatoes and spaghetti sauce makes this meal cheap and extremely easy to make.
Amanda
Our favorite cheap meal to make is spaghetti. I usually make extra and freeze it and everyone enjoys it, plus I add finely grated carrots to it to add extra veggies and the kids have no clue!

We eat a lot of pasta with sauce. Buy pasta and sauce in bulk at Costco and then we just need to get meat or chicken to add to it.

My favorite cheap meal is to roast a whole chicken with Mrs. Cubbison’s dressing stuffed inside. I throw some carrots around the chicken and it makes it a one pot meal as well. When I am done I cook the carcass and make two big pots of soup!

Tacos are our good cheap eats!!! Add a can of refried beans to the meat to stretch it further.
Andie
I think our favorite quick and cheap dinner is chicken alfredo with pasta! One pot, one colander, one spoon $3.00 tops for a family of four!

Meatloaf is a favorite, and it takes only a few inexpensive ingredients. We really like this one that incorporates stuffing mix.

Of course it is Baked Ziti! Cheap AND easy!
Take 1/2 box of DRY Ziti noodles, place in greased 9 x13 pan. Pour in 1 jar of Ragu and one and a half cups of water, stir. Throw in some frozen meatballs and sprinkle with some parmesean cheese. Bake covered for 45 min, then uncovered for 15 min at 350 degrees.
If I get everything on sale with coupons I can make it for about 5 dollars. Feeds 5-6.

Lentil soup–bag of lentils, chopped onion, couple of carrots, 2 stalks celery, 1 large potato. Chop fresh veggies, cook lentils in water or chicken broth (I use bullion) with the veggies. Stir in a handful of chopped greens (collards or chard) & juice of a lemon. I get the lemon & chard from my yard so this really is a cheap, nutritious meal, and delicious. Serve with rustic bread or biscuits or muffins.

Having a breakfast item for dinner one night and a meatless meal another night each week.
