Huh – did you say Crisco Olive Oil?
Crisco certainly isn’t the first brand that comes to my mind when I think “olive oil,” so I’m assuming it’s the same for you all. However, I was pleasantly surprised to discover that it’s actually quite good. I’ve been successfully substituting it for my more expensive olive oils over the past few weeks.
Here’s just one example of the tasty recipes that you can create with it.
Mediterranean Salad
Salad:
1 pint grape tomatoes (use a mixture of red and yellow for added interest), halved
1 6-ounce container Bocconcini (small fresh mozzarella balls), drained
1 paper thin slice proscuitto ham, finely chopped
1/3 cup pitted kalamata olives, drained
1 tablespoon capers, drained
Dressing:
1/4 cup white wine vinegar
2 teaspoons Dijon mustard
1/8 teaspoon black pepper
Pinch of sugar
3/4 cup Crisco Extra Virgin Olive Oil
2 tablespoons chopped chives
2 tablespoons chopped fresh oregano
Place the grape tomatoes, bocconcini, proscuitto, olives and capers in a large bowl; set aside.
In a small bowl, whisk together the white wine vinegar, mustard, black pepper and sugar. Slowly add the Crisco Extra Virgin Olive Oil in a steady stream, whisking while pouring; whisk until dressing is well blended. Whisk in the chives and oregano. Pour dressing over salad; gently toss to combine. Refrigerate, covered, several hours or overnight to allow flavors to develop, stirring occasionally. Season with additional black pepper if desired. Using a slotted spoon, transfer the tomato mixture to a serving bowl. Garnish with fresh oregano sprigs, if desired. Serve.
Yummy!

I use olive oil for stovetop cooking, and the extralight first press virgin for baking as well. I don’t use it to scramble eggs though! And dinner just isn’t dinner without olive oil, garlic and onions :)

A recipe we haven’t made for a while (slightly spicy for wee ones, although using less than adult amounts of pepper would take care of this!):
These amounts will be for you to decide, as much or as little as you desire for your serving sizes, and tastes.
Items needed – Olive oil, flat leaf italian parsley (chopped), garlic cloves (sliced), small dried red peppers (be careful!). Heat oil in pan and toss the garlic and red peppers in. Within a few minutes toss in how ever much parsley as you desire and heat through until fairly limp. The recipe calls for removing the garlic and hot peppers, but we tend to leave the garlic in, but do remove the peppers. Toss sauce with pasta. Mmmmm….yummmy….Think I’ll put the ingredients on my shopping list right now! Oh, did I mention – serve with fresh parmesan over the top? Gotta do that. Enjoy!

I’ll be glad to win Anything that calls for oil, I substitute it. It’s so much healthier and gives good such a delicious taste, but a bit expensive so this will save me some cash…thanks.

I use olive oil to make my baked potatoes restaurant-quality yummified. I rub olive oil on the outside of the cleaned potato – I get it fairly greasy. Then I roll the potato in some kosher salt (or I use Camargue French Fleur de Sel Gourmet Sea Salt), season with some fresh ground pepper and bake in the oven. When it’s done, the skin is flavorful and crusty just like my favorite restaurant’s version. Plus the skin is good for you!

I use it in all of my frying, I even drizzle it into a pan, take a bakery roll and swirl the outside of it in the LIGHTLY oiled pan and fry it until the outside gets nice and crispy. This makes the roll tender on the inside and snappy/crunchy on the outside…so cool!
