Do-It-Yourself Homemade Microwave Popcorn

I mentioned some time ago that we make our own homemade microwave popcorn. Many of you requested the "recipe" and I've finally had a chance to write it up for you. Enjoy!

Backpacks have been filled with supplies, wardrobes have been rounded out (can you believe I scored those Under Armour jackets for my boys for just $13 each?!?), and four of my five kids are officially in school. My three-year-old will be starting preschool tomorrow, and this mama is looking forward to a few hours of uninterrupted work time three days a week!

However, that doesn't mean I'm shooing them all out the door in the mornings without a healthy breakfast to start their day. We've been on the hunt for quick and easy breakfast solutions, like this Microwave Egg, Sausage, & Cheddar Breakfast Tortilla recipe found on the Incredible Egg website. This high-quality protein-filled breakfast is affordable and gives them the nutrients to start their day off on the right foot.

Speaking of starting the day off on the right foot... My kids can be a bit slow moving in the mornings, so a hearty breakfast that they can hold in their hand is perfect because they can finish it off on their way to the bus stop if need be! Plus this recipe can easily be made ahead and frozen so you just need to pop them in the microwave for a few minutes to thaw.

Microwave Egg, Sausage, & Cheddar Breakfast Tortilla

Ingredients:

  • 1 Incredible Edible Egg
  • 1 fully-cooked breakfast sausage link, chopped (3/4 oz)
  • 1 tablespoon shredded Cheddar cheese
  • 1 wheat flour tortilla (6-inch)

Instructions:

  1. Coat 2-cup microwave-safe cereal bowl with cooking spray. Add egg; beat until blended. Sprinkle sausage over egg.
  2. Microwave on high for 45 seconds; stir. Microwave until egg is almost set, about 15 seconds longer.
  3. Top egg with cheese. Place onto tortilla. Fold bottom of tortilla over egg, then fold in sides.

Like the Easy 5-Minute Breakfast Egg Muffins recipe I shared previously, this recipe is endlessly customizable by changing up the meat or adding various condiments!

Friday Night Grilled Pizzas

We kind of got away from our Friday night "Pizza Night" tradition over our busy summer, but now that school is back in session, we've penciled it into our weekly calendar once again. Sometimes we order takeout pizza and sometimes we make our own from scratch, but this past Friday we tried something a little different -- grilled pizzas!

I've had several people tell me just how good the Mama Mary's Thin & Crispy Pizza Crusts are, so we picked them up at Walmart to give them a try. They're prebaked and come in a 2-pack, which makes them ultra convenient, especially since it takes only about 10 minutes to grill them up.

My kids are pretty traditional when it comes to pizza, so we topped them with Ragu Homestyle Pizza Sauce and Great Value Mozzarella Cheese and added some Mama Mary's Pepperoni to one for the meat lovers.

I prefer more of a gourmet-style pizza, so I topped another crust with some of my homemade simple basil pesto, Roma tomatoes, and fresh mozzarella cheese -- it was absolutely divine!

Making the pizzas couldn't have been easier. I just oiled both sides of the crust with a little olive oil and placed it directly on the grilled top side down for about three minutes. Then I flipped it over and added our toppings and grilled it for about another seven minutes until all of the cheese was melted.

I would definitely keep these crusts on hand for a busy weeknight meal solution -- much better than fast food -- and I think it would be a ton of fun to host a grilled pizza family cookout event with a pizza topping bar. Maybe for Labor Day even?!?

As I'm sure you're well aware, eggs are an affordable way to incorporate some protein into your diet even without a coupon. But did you also know that studies have shown that a complete breakfast, including eggs, can increase classroom performance? Scientific studies demonstrate the cognitive benefits of eating breakfast, such as improved memory recall time, improved grades and higher test scores. They also provide long-lasting energy and the "building blocks" kids' bodies need to grow and perform properly.

But my favorite reason for incorporating eggs into a healthy breakfast is that they're so darn quick and easy to prepare. My microwave is probably one of the most under-utilized appliances in my kitchen, but it will be getting tons of use this school year with this easy 5-minute recipe for Breakfast Egg Muffins!

Easy 5-Minute Breakfast Egg Muffins

Ingredients:

  • 1 Incredible Edible Egg
  • 1 teaspoon butter
  • 2 teaspoons milk
  • 1 English muffin
  • 1 slice of American cheese
  • salt
  • pepper

Instructions:

  1. Microwave about 1 teaspoon of butter in a microwave safe bowl for about 15 seconds. Swirl it around your bowl so that the egg doesn't stick. I used a small ramekin so that the egg would be roughly the same size as my English muffin.
  2. Scramble one egg, a splash of milk (about 2 teaspoons), and salt and pepper to taste in a separate bowl.
  3. Pour the egg mixture into the buttered bowl and microwave for about 45 seconds. I found that I needed to flip it over and pop it back in for about another 15 seconds to finish the bottom. Also, microwave wattages vary, so you may need to use a little less or a little more time depending on how wet or dry you like your eggs.
  4. While the eggs are cooking, pop your English muffin in the toaster.
  5. Assemble your egg on the toasted English muffin. Place your slice of American cheese on top of the egg, and the heat of the cooked egg and toasted muffin will melt it perfectly. Top as desired.

The great thing about this simple recipe is that there are endless ways to customize it. I squirted a little sriracha sauce on it, but you could use mayo, salsa, etc. Save extra bacon or diced veggies to mix into the eggs and change it up a little every day!
