We’ve decided to change things up a bit this year, and instead of cooking out for Memorial Day, I’ll be serving these Slow Cooker Beef Barbacoa tacos. The slow cooker makes this barbacoa recipe so easy to make, and the house smells simply wonderful while it’s cooking!

You can buy CHiCHi’s corn cake pouches at the store, just add creamed corn. We love that!!! and so easy. I have heard of recipes that include Jiffy corn bread mixes and butter and creamed corn, but I’ve never tried that…I always just buy the CHiChi’s brand.
