Memorial Day Cookout Recipe Ideas

We've decided to change things up a bit this year, and instead of cooking out for Memorial Day, I'll be serving these Slow Cooker Beef Barbacoa tacos. The slow cooker makes this barbacoa recipe so easy to make, and the house smells simply wonderful while it's cooking!

I plan to pair it with some cilantro lime rice, homemade fresh tomato salsa, and I'm on the hunt for a really good Chi-Chi's corn cake clone recipe. Anyone have one to share?!?

If you're into more traditional cookout fare, here are some of our family favorites:

A simple coffee marinade adds a mouth-watering, smokey flavor to to these coffee-marinated rib eye steaks that you will never be able to pinpoint as coffee!

Wash it all down with these easy strawberry daiquiris. I'm not kidding when I say these are the BEST EVER!

You can buy CHiCHi's corn cake pouches at the store, just add creamed corn. We love that!!! and so easy. I have heard of recipes that include Jiffy corn bread mixes and butter and creamed corn, but I've never tried that...I always just buy the CHiChi's brand.
