I love Jiffy mixes. I used the date muffin mix as a base and add raw cranberries and walnuts to each muffin. The result is wonderful. I use the yellow cake to make pineapple upside down cake. The pastry is so much better than any other that I have tried that I use it exclusively to make pies quickly using no sugar added fruit to assist our diabetic get a little pie once in awhile.
I also like the cornbread muffins. So far, I have tried and used a lot of these mixes. They make cooking faster, better and are really good for cooking for 2. I do improvise with them. Here is a quicky to use your left over whole berry cranberry sauce. Make the cake or even the bran muffin mix. Not too thick. Add a little more milk if it needs to be thinned. In a pan sprayed with Pam, put half of the batter on the bottom of the pan, then spread the cranberry sauce over this and add the rest of the batter to cover the sauce. Bake at about 350 until done, probably 15 to 20 minutes. My husband loved it even though he didn't eat any cranberry sauce with his turkey.
